Product Details/Overview
Origin
An authentic Modenese product, made 100% in the province of Modena, Emilia Romagna, Northern Italy. Modena is the birthplace of Balsamic Vinegar.
Raw Materials
Produced from a careful selection of native red grapes grown in Modena. After the harvest, the grapes are gently pressed to obtain fresh grape juice.
Grape Must Cooking
The grape juice is slowly cooked in steel boilers for 24-30 hours at temperature between 60°C and 90°C. During the process, it reduces about one third, becoming darker, thicker, and naturally sweet with fruity notes.
Blending
The cooked must is blended with premium wine vinegar, obtainer from the fermentation of Italian wines. The final blend consists of 60% cooked grape must and 40% wine vinegar, achieving a balanced sweet-and-sour profile.
Aging
The product is aged for a minimum of 5 years in European oak barrels ranging from 220 to 500 litres, crafted by skilled master coopers.
Tasting and Bottling
After aging, the vinegar is evaluated by expert tasters for density, acidity and flavor. Once approved, it is hand-bottled in 250 ml bottles, sealed and labeled.
Pairings
On the palate, it offers a refined harmony between natural sweetness and gentle acidity, designed to enhance dishes without overpowering them. It pairs beautifully with fresh or cooked vegetables, red meats, eggs, and fresh cheeses. When used sparingly, it also complements fish dishes, adding complexity while respecting their delicate flavors.
